    Starbucks Bets on In-House Tech, to Shutter 250 Stores

    Starbucks plans to open a technology hub in Chennai, India, in fiscal year 2027, bringing more work currently performed by third-party service providers in-house. The company is already using AI to build software for inventory tracking and maintenance management, and spends about $400 million annually on software. Meanwhile, as part of its Back to Starbucks plan, it will close 250 North American locations, about 1% of its more than 18,000 North American coffeehouses, and has completed remodels at more than 1,000 stores.

    Did AI Enable Corporate Cuts at Starbucks and Portillo's?

    Restaurant brands are using AI to trim corporate headcount rather than hourly staff. Starbucks has cut over 2,000 corporate workers since early 2025, and Portillo's reduced 18% of its corporate team to fund store growth. Hospitality Technology's 2026 AI Impact Study shows 62% of restaurant tech leaders use AI to automate back-office admin, and 29% say AI directly enables corporate headcount cuts, versus 18% reducing hourly store labor. AI is impacting corporate roles more, while store-level experience remains a focus.
