Xinjiang Releases Five Group Standards for Signature Foods
On September 20, the Urumqi Catering Service Industry Association released five group standards covering Xinjiang signature foods: grilled lamb skewers, rack lamb roasted in a naan pit, whole roast lamb, fried rice noodles and mixed rice noodles, effective October 20. It follows eight standards issued in 2025 for dishes such as mixed noodles, big-plate chicken and lamb pilaf. The new standards regulate ingredient selection, processing techniques, ratio parameters, cooking methods, sensory quality and food safety, turning folk cooking experience into replicable technical standards.
